Kilogram telećeg mesa ili mlade ovčetine, oprati, špikovati belim lukom i staviti u šerpu. Kilogram crnog luka iseći na rebarca i staviti povrh mesa. U manjem sudu izmešati vezicu sitno seckanog peršuna, malo bibera, iseckanu zelenu papričicu i vinsku čašu belog vina.

Posolite po ukusu, razrediti šoljicom vode i time preliti meso u šerpi, dodati masti po volji kašiku do dve, sud hermetički zatvoriti i u međuvremenu ne otvarati. Peći jedan sat u pećnici na umerenoj vatri.
