Potrebi sastojci:
ZA 5 l ASPIKA:
200 g sitno isečenog crnog luka
2isecena persunova korena
1 celerov koren isečen nakriške
2 struka majčine dušice
1/2lovorova lista
250 g otpada od pečuraka
750 g ribljeg mesa
750 g ribljih kostiju, glava, peraja i repova
6 l ribljeg buona
so
20 zrna bibera
10 kapi limunovog soka
3 belanceta
300 g mlevenog govećeg mesa
Način pripreme:
U veći lonac staviti povrće, mirisno bilje i otpad od pečuraka. Spustiti riblje meso,kosti i ostale riblje otpatke i naliti ribljim buJnom. Dodati so, biber i limunov sok i pustiti da provri. Skinuti penu i kuvati istiha 45 minuta, Izmaći supu s vatre i skinuti sa površine svu masnoću. Zatim je procediti kroz gustu cediljku ili gazu i izbistriti belancima i mlevevenim mesom na sledeći način: u većoj posudi lako ulupati belanca dodati mleveno meso i mešati dalje na vatri dodajući postepeno prohlaćen buJon sve dok provri, a zatim kuvati istiha pola sata. Gotov aspik procediti kroz vlažan salvet.
