Bolonjski umak od mesa

Potrebni sastojci:
ZA 4 OSOBE:
2 kašike ulja
50 g sitno isečene šunke ili slanine
1/4 glavice sitno isečenog crnog luka
1 sitno isečena šargarepa
1 mali sitno isečen celer
1 češanj sitno iseckanog belog luka
250 g mlevenog govećeg mesa
15 g suvih pečuraka
1 dcl crnog vina
1 kašika sitno iseckanog peršuna
1 kašičica sitno iseckanog majorana
1/8 kašičice morskog oraščića u prahu
so
biber
1/2 kašike brašna
200 g oljuštenog, sitno isečenog paradajza
Način pripreme:
Propržiti na kašici ulja šunku ili slaninu. U drugoj posudi na preostaloj kašici ulja propržiti crni luk, šargarepu, celer i beli luk. Dodati proprženu šunku, meso i pečurke (prethodno potopljene u mlaku vodu, oceđene i isečene) i pirjaniti sve zajedno desetak minuta. Zatim dodati vino, mirisno bilje i začine, i mešati na tihoj vatri dok vino ne uvri. Umešati brašno i paradajz i ostaviti umak na tihoj vatri da krčka 20 minuta. Služiti uz pirinač i sve vrste kuvanog testa.
